This is a super aromatic chutney that pairs very well with Idli, Tomato Dosa, Rava Upma, Kuzhi Paniyaram, etc. If you want to store the chutney for a week, skip coconut in the recipe and go ahead. Pudina thokku - I often make some kind of thokku / thogayal during weekends for our usual idli dosa routine.

Steps to make Mark's Podina Chutney (Mint Pickle):
  1. Blend all ingredients except the peanut butter and manna together.
  2. Warm frying pan with another 100ml oil on medium heat. Add the manja.
  3. Add the blended ingredients and mix through without burning.
  4. Allow to simmer on low for 10 minutes.
  5. Set aside to cool and then add the peanut butter.
