Remove the chicken to a large platter and set aside. Coconut curry chicken has TONS of variations; from South India to Thailand, no two curries are exactly the same. Our Americanized version might be a bit untraditional, but trust us, it's delicious. Cook rice according to package directions.

  1. Mix all the marinate ingredients together in a bowl

  4. In a medium pot put vegetable oil, onion and carrots then stir for 3 minutes on medium heat
  5. Add the chicken and stir on high heat until it becomes white
  6. Addthe boiling water and stir on medium heat
  7. Add more curry powder and salt if it need
  8. Cover the pot for 25-30 minutes
  9. Add pepper four minutes before you turn off the oven
  10. Pour it in a dish and serve it with rice or noodles

Meanwhile, sprinkle the chicken with curry, salt and pepper. In a large skillet, saute chicken and onion in oil until chicken is no longer pink. Stir in coconut milk and tomato paste.
