- Marinade the pork with all the ingredients and leave to absorb the marinade overnight in the fridge.
- Remove from the fridge about an hour before cooking.
- When it's time to cook pre-heat the oven to 160°C/320°F.
- Cook for 2 hours to 2 and half hours on low.
- Turn over every hour and baste.
- Once cooked cover in foil and let it rest for 20 minutes.
- Cut pork into slices.
