  1. Prepare 3 oz baby spinach
  2. Take 1 orange
  3. Make ready 2 tbsp pistachio
  4. Take 2 tbsp vinegar
  5. Prepare 1/2 lb Brussels sprouts
  6. Make ready 1 cup farro
  7. Take 1 shallot
  8. Prepare 4 cooked beets
  9. Make ready 1 cucumber

  1. Cook Farro for 20 minutes. Drain and mix in spinach. Salt and Pepper to taste. Cover and set aside.
  2. Cut off ends and then quarter Brussels sprout. Add 1 tsp olive oil to skillet, heat and add Brussel sprouts. Cook for four minutes. Add thinly sliced shallot. Cook for three minutes. Mix 1 Tblsp Harissa with 2 tbsp water. Add to skillet and stir. Set aside.
  3. In separate bowl: Small dice cucumbers, beets mix and add 1 tsp olive oil and 2 Tblsp vinegar. Let marinate for 5 minutes.
  4. Chop Orange and roughly chop pistachio. Add 1 tsp of olive oil, salt and pepper to taste.
  5. Arrange in bowl.
