- Prepare 1 tbsp Coriander leaves

- Chop onions and tomatoes into large pieces. Take all whole spices together. Add 1 tsp cumin seeds into this plate. Save rest for tempering.
- Take a tsp oil into a notstick pan. Add all whole spices (everything except onions and tomatoes) into the pan. Saute for 1 min. Now add onions and tomatoes. cook for another 3-4 mins or until tomatoes are soft and oil starts to separate. Cool completely. Take the things into mixer jar. Add soaked cashews too.
- Grind the things to a smooth paste. Take 3 tbsp oil in same pan. Add rest cumin seeds and asafoetida. Pour the paste add salt to taste. Saute the grevy. Add in curd and fresh cream. Mix well. Saute until oil separates.
- Add in red chilli powder, turmeric powder, coriander powder. add kasuri Methi. cook for another 1 min. take out the grevy mix into a plate.
- Get the veggies and cheese ready.
- Heat rest oil into pan. Add in all veggies. Stirr fry in high flame for just 30 seconds. We don't want to cook them. Now add grevy mix. Combine well. Add 1/2 cup water and 1/4 tsp sugar. Bring to a nice simmer.
- Take out the sabji into a serving dish. Put cheese cubes. Grate some cheese on top. Garnish with coriander and spring onions. Serve with hot kulchas.
